Butchery
We deliver Butchery Apprenticeships in a number of retail butcher shops and factory-based environments across Norfolk. You will work with other employees who will instruct you on everyday tasks helping you gain on-the-job training. Our experienced butchery tutors will visit monthly to accompany the study side of the Apprenticeship teaching and developing new skills and knowledge. Our tutors will also set written work via an online portfolio for you to complete in-between visits.
In addition, you will be invited to attend workshops at Poultec Training in Mattishall. You and other butchery Apprentices will carry out practical work led by your tutor in our fully equipped, state of the art butchery suite. These workshops include game butchery, pie making, primal and secondary beef, pork and lamb butchery. All providing you with transferable skills as well information to take away, helping you to develop.
Butchery is a highly skilled profession and involves lots of techniques, processes and equipment. Therefore, this Apprenticeship will include tasks such as cutting, preparing, packing and presenting meat to the standards required of the business and specialist needs of commercial and/or consumers.
Following the Butchery Apprenticeship there are opportunities to continue studies with a higher Apprenticeship or progress onto becoming a butchery supervisor or opening/owning a butcher’s shop. Apprentices will also be recognised by the Institute of Meat (IOM).

The Apprenticeship will include the following:
- Level 2 Diploma for Proficiency in Meat and Poultry Industry Skills
- Level 2 Award in Food Safety Manufacturing MAP
- Level 2 Award in Knife Skills for Food
To complete the Apprenticeship an End Point Assessment will be carried out by an independent assessor. Your tutor will ensure that you are ready for this assessment.
